Carricante is the backbone of this wine, providing high acidity and, as a result, longevity. After careful selection, the grapes are destemmed and crushed, followed by cryomaceration to extract color and enrich the aromatic profile. At the end of fermenta- tion, the wine first ages in stainless steel and then in the bottle for at least 6 months. The color reflects the characteristics of an Etna DOC Bianco, enriched by the intensity imparted by the cryomaceration. The aromatic profile is rich with distinct floral, fruity, and herbal notes. The taste profile is typical of the eastern slope of Mount Etna, with pronounced acidity and a sapidity influenced by the winds rising from the sea.
