Produced from Nerello Mascalese grapes from the vineyard in Contrada Zotti, Montargano, in the municipality of Mascali.
The choice of harvest period plays a crucial role in the success of the entire sparkling wine production process. Sugars, acids, and pH are monitored almost daily.
The aging period in bottle on the lees reaches 24 months. At disgorging, the sparkling wine undergoes no dosage.
The topping-up is done with the same sparkling wine.
The perlage is fine and continuous, with an intense nose featuring hints of bread crust, floral notes, and citrus undertones. With good structure and persistence, great freshness, and elegance, this sparkling wine expresses a strong typicity of the eastern slope of Mount Etna.
Highly versatile, perfect throughout a meal; excellent with seafood salad and fried foods, pasta dishes with shellfish, and traditional Sicilian fish dishes.
